Does anyone else bulk buy bananas to have as their filling and healthy snack for throughout the week when hunger strikes? Aaaand does anyone else always have at least three brown bananas remaining on their worktop the following weekend? I’m sure my boyfriend thinks I buy them purely to make cakes…
Banana has long been the staple of my sweet bakes (as proven here, here and here) as they’re cheap and cheerful and can be thrown together with basic store cupboard ingredients to make something delicious. This recipe is no different – the ingredients are cheap and cheerful and this is a ‘bung it in the oven and leave for an hour’ bake. Easy!
180g caster sugar
200g self raising flour
4 tablespoons of cocoa powder (I use Bourneville!)
1 teaspoon of baking powder
2 tablespoons of milk (dairy works best)
2 mashed bananas
- Cream together the butter and sugar before beating in the eggs
- Sift in the flour, cocoa powder and baking powder and mix
- Once mixed together (don’t overmix!), stir in the milk and mashed bananas
- Pop in a lined loaf tin and into the oven on 180C/gas mark 4 for 1 hour. Check it after 40ish minutes and pop some baking paper on the top to stop it burning.
And that’s it! It really is easy peasy eh?
