No, these aren’t the giant Maltesers of your dreams and no, these aren’t the aftermath of a dodgy dinner. Although these aren’t the prettiest little things, I’ve been on the hunt for something sweet I can whip up in the kitchen and not feel tooooo guilty about scoffing three in as many seconds.
This is my own spin on recipes by Madeleine Shaw and Anna from ViviannaDoesMakeup that I find produce a tasty outcome! The recipe makes around 24 servings, depending on how big you like your balls (hehe).
150g pitted medjool dates (you can buy them in Tesco and M&S and pit them yourself)
50g finely diced almonds
3 heaped tablespoons of cacao powder
1 tablespoon coconut oil
1 tablespoon set honey
125g nut butter
1. Blend the almonds and set aside. Chop the dates into little pieces and pop them in the blender with the nut butter (chopping them small makes it easier for the blender)
2. Add everything into the blender for a final mix. Add cacao nibs or chocolate chips if you’re feeling wild.
3. Roll the mixture into balls and place on a lined tray in the freezer for an hour to set. Keep them in tupperware in the fridge and they last about a week.
That’s it! A simple and easy recipe to appease your sweet tooth. I like these dipped in yoghurt too as a dessert!
