If there’s one thing I would say about my eating habits, it’s that my sweet tooth is out of control. I could demolish a ‘share’ sized bar (who shares those, seriously) without a second thought and I feel like I’ve deprived myself if I haven’t had chocolate for a day.
Those habits don’t correlate well with the thighs and I’m currently on an (un)official mission to get fitter and healthier. After a few health scares in people close to me, it’s finally clicked that what you put in your body really does have an impact on your later life (as well as your skin).
I’ve been experimenting in the kitchen with homemade sweet alternatives and so far these are my favourite by far – banana ice cream bars. These are so easy to make with just three ingredients and are perfect to keep in the freezer and grab whenever you fancy a sweet treat.
You will need:
3 ripe bananas (the browner the skin the better)
Cacao nibs (I bought these in the baking section in Sainsbury’s)
1 heaped tablespoon of nut butter (I’ve tried both peanut and almond and the latter is my preference)
1. Peel and finely chop the bananas. Pop then in a blender with the nut butter and blend. This will take a while and you’ll need to give it a few shakes and a stir
2. When the mixture looks like a runny paste, add as many cacao nibs as you like (I used a small handful) and give it another whizz
3. Pour into a small tupperware container and pop in the freezer until solid
And that’s it! Really easy and so tasty. If you fancy bulkier ice cream consistency, freeze the sliced bananas beforehand and continue the same steps for an instant snack (see below!)
