It’s 10.09pm on Pancake Day so I’m pretty late to the party with this one but after just consuming these absolute beauties, I had to share the recipe with you. There are a lot of these flour-free recipes floating around the internet, but I tweaked it a tiny bit to get the perfect consistency!
This is literally the most simple recipe in the world and is completely guilt free! All you need is five bananas, three eggs and some blueberries and voila, you have four American style pancakes!
I peeled and mashed the bananas and then in a separate bowl, whisked three eggs together. I then stirred it all together and put a ladleful on a piping hot frying pan. After about 10 seconds, I threw some blueberries on the top and as soon as it all moved freely around the pan, flipped it over using a spatula. If you’re a keen tosser (lolz) this is not for you – without a spatula this would be really messy as they are thick and runny while cooking.
You could serve these with some icing sugar or maybe some Nutella, but I just opted to have a few extra blueberries on the side. I’m trying to reduce my carbohydrate and sugar intake at the moment but am struggling for snack ideas! Have you got any healthy snack recipes you would recommend?
